From the time I was little, I was always getting creative in the kitchen. I loved making healthy treats, especially in the summertime. Our mission at Doc's Daughters is to create healthy versions of the foods that were so fun to eat when we were young.
These 4-layer popsicles are the perfect combination of creamy, fruity, and includes two layers plus a crunchy crumble. The combination of flavors makes this popsicle simply delicious. They are perfect and refreshing on a hot summer day. Bonus: your kids will love them too.
This recipe includes my favorite summer fruit, watermelon. Summertime brings the juiciest and sweetest watermelons.
Why are they so nutritious?
When cooking and coming up with recipes I usually use ANDI scores to figure out what are the most nutrient-dense food for the lowest calories. ANDI (Aggregate Nutrient Density Index) was created by Dr. Fuhrman (shout out Dad) to show how popular foods stack up in terms of micronutrient density per calorie. I love that this recipe has a layer of strawberry because they are one of my favorite fruits and they are the highest nutrient per calorie fruit out there! The more nutrient-dense food you consume, the more satisfied you will be with fewer calories.
Sometimes watermelon can get the reputation of being “all sugar” and less nutrients than berries. But in fact, watermelon is packed with nutrients too. Watermelon is rich in potassium and also contains antioxidants, magnesium, vitamins B1 and B6, and more!

Popsicle Tips
● Use a good popsicle mold - I use the Norpro Frozen Ice Pop Maker and love it!
● Use the right fruit - It’s important that your fruit is ripe and maybe even slightly over ripe. When fruit freezes the flavor becomes less intense so using very ripe fruit is a good idea for the most sweetness and flavor!
● Freeze each layer before continuing - I recommend freezing each layer for at least 4hrs before adding the next layer. This will ensure that the layers will not mix and you will get the right results.

Note: the crumble is enough for 10 popsicles, but you will have leftover watermelon and strawberry layer! I love to add ice and sparkling water to the watermelon layer for a refreshing mocktail. The strawberry layer will thicken in the fridge or freezer to have a delicious nice cream to be eaten with fresh fruit or chocolate chips.
Ingredients:
Watermelon Layer
500 grams watermelon
¼ cup organic light coconut milk
1 tsp vanilla bean powder
Crumble
4 Medjool dates
¼ cup organic rolled oats
¼ cup pecans
½ tsp vanilla bean powder
2 tbsp coconut flakes
2 tbsp water
Strawberry Layer
1 16 ounce box organic strawberries
3 Medjool dates
6 tbsp cashew butter (this is 1/4 cup + 2 tbsp)
2 tbsp unsweetened vanilla almond milk
½ tbsp lemon juice
½ tsp vanilla bean powder
2 tbsp arrowroot or tapioca starch
Instructions:
1. Blend watermelon layer ingredients. Fill popsicle 1/3 full and insert popsicle stick.Freeze for at least 4hrs
2. Add crumble ingredients to food processor and process until well combined. Put crumble on top of watermelon layer and put back in freezer.
3. Blend strawberry layer, fill popsicle mold, put in freezer for at least 4hrs. Add another layer of the crumble, put back in the freezer overnight.
