Imagine your spoon diving into a layer of creamy, chilled nice cream before sinking into the warm, soft oats beneath. Preparation time: 10 minutes

Bake time: 15-20 minutes

Yields: 6oz for 1-2 servings


Ingredients:

  • 1 packet of Doc’s Daughters Carrot Cake Superfood Overnight Oats 
  • 1 medium-sized banana 
  • 1/2 tablespoon of date syrup
  • 1 flax egg (combine 1 tablespoon of ground flax seed and 2 tablespoons of water, left to sit for 5 minutes) 
  • 1/2 teaspoon of baking powder 
  • 1 tablespoon of water 

Optional toppings: raisins and chopped, dried figs. If you’re feeling extra adventurous, add a scoop of your favorite plant-based ice cream to elevate it to the next level as the perfect dessert. Our favorite store bought vegan ice cream is cosmic bliss, or we make our own! 


Instructions:

  1. Preheat your oven to 350 degrees F. 
  2. Gather all the ingredients and blend them together in a blender until smooth. 
  3. Once your batter is ready, pour it into a muffin pan or a glass/ceramic bowl 
  4. Now is the time you can add toppings like raisins and chopped figs if desired
  5. Place in the oven and bake for 15-20 minutes, depending on how gooey you want it. Just remember, don't over-bake them, or the oats might become dried out.

After baking to your liking, let the baked oats cool and enjoy while still warm.
