    • Start by preparing the wet ingredients. Core and chop 1 1/2 large honeycrisp apples.
    • In a blender, combine the chopped apples, 4 medjool dates (pitted), 1/2 cup of unsweetened vanilla almond milk, and 2 teaspoons of vanilla extract or vanilla bean powder. Blend until smooth to create a delicious apple sauce mixture.
  2. Mix the Dough:
    • In a large mixing bowl, add 2/3 cup of almond flour, 2/3 cup of coconut flour, and 1/2 cup of cashew butter.
    • Pour the apple sauce mixture from the blender into the bowl with the dry ingredients. Mix everything together until a dough forms. The consistency should be thick enough to hold its shape when rolled into balls.
  3. Add the Mix-Ins:
    • Gently fold in 1/2 cup of cacao nibs and 1/2 cup of dried cherries. These will add a wonderful crunch and bursts of tart sweetness to your muffin balls.
  4. Form the Balls:
    • Using your hands, form the dough into small balls. You can make them whatever size you prefer, but we recommend rolling them into bite-sized pieces for easy snacking.
