Introducing: Cream of Broccoli, my go-to cozy curry broccoli soup that gets its name from the star of the show. It’s bold, comforting, and secretly full of fiber, healthy fats, and plant-based protein.

Made with a base of cashews and loaded with bright veggies like broccoli, celery, and carrot, this soup blends into a dreamy, velvety texture—with a subtle heat and zing from green curry and lemon. It’s perfect for chilly days or anytime your body craves something deeply nourishing.

Ingredients

 

Cashew Base + Veggies (Boil Together):

  • 2 cups raw cashews

  • 4 cups water

  • 4 cups broccoli florets, chopped

  • ½ sweet onion (about 1 cup, chopped)

  • 1 large garlic clove (or 2 small), minced

  • 2 stalks celery, chopped

  • ½ cup carrot, diced

  • Juice of ½ a lemon

  • 1 tsp green curry paste

To Blend (Add After Boiling):

  • 2 additional cups water

  • 1 tbsp green curry paste

  • ¼ tsp turmeric

  • ½ tsp curry powder

  • ¼ tsp garlic powder

  • ¼ tsp black pepper

Instructions

  1. Boil the Base: In a large pot, combine cashews, 4 cups water, broccoli, onion, garlic, celery, carrot, lemon juice, and green curry paste. These are all of the ingredients listed under " Cashew Base + Veggies (Boil Together)." Bring to a boil, then reduce to medium heat and simmer for 10 minutes.
  2. Blend It Up: Carefully transfer everything from the pot into a high-speed blender. Add the remaining 2 cups of water along with the curry paste, turmeric, curry powder, garlic powder, and black pepper. Blend on high until you reach your desired consistency—creamy and dreamy! I like to leave a few chunks for texture, but it’s totally up to you.
  3. Serve & Store: Enjoy warm, and store leftovers in the fridge for up to 5 days. Perfect for quick lunches or cozy dinners.
