Ingredients
Cashew Base + Veggies (Boil Together):

2 cups raw cashews

4 cups water

4 cups broccoli florets, chopped

½ sweet onion (about 1 cup, chopped)

1 large garlic clove (or 2 small), minced

2 stalks celery, chopped

½ cup carrot, diced

Juice of ½ a lemon

1 tsp green curry paste
To Blend (Add After Boiling):

2 additional cups water

1 tbsp green curry paste

¼ tsp turmeric
-
½ tsp curry powder
-
¼ tsp garlic powder

¼ tsp black pepper
Instructions
- Boil the Base: In a large pot, combine cashews, 4 cups water, broccoli, onion, garlic, celery, carrot, lemon juice, and green curry paste. These are all of the ingredients listed under " Cashew Base + Veggies (Boil Together)." Bring to a boil, then reduce to medium heat and simmer for 10 minutes.
- Blend It Up: Carefully transfer everything from the pot into a high-speed blender. Add the remaining 2 cups of water along with the curry paste, turmeric, curry powder, garlic powder, and black pepper. Blend on high until you reach your desired consistency—creamy and dreamy! I like to leave a few chunks for texture, but it’s totally up to you.
- Serve & Store: Enjoy warm, and store leftovers in the fridge for up to 5 days. Perfect for quick lunches or cozy dinners.
