Use our Peanut Butter Protein Overnight Oats to make simple, healthy, flourless pancakes at home. Packed with flavor and made with just three ingredients, these pancakes contain no gluten, dairy, or refined sugar, making them perfect for switching up your go-to breakfast.
Seriously, pancakes that are delicious, easy to make, fruit-sweetened, and high in plant protein? Yes, please!
Studies have shown that a higher intake of plant protein is linked to better health. Specifically, it can improve blood pressure, LDL cholesterol, body weight, insulin sensitivity, and lifespan. Our Peanut Butter Protein Overnight Oats already have both hemp and pea protein added. These fantastic sources of plant protein contain all nine essential amino acids! Additionally, hemp is easy to digest and high in fiber, healthy fats, and minerals, while pea protein is easily absorbed, high in iron, and good for muscle growth and heart health.
Let's dive into the recipe!
Ingredients:
- 2 peanut butter protein overnight oats packets
- 1/2 cup of milk of choice (I used unsweetened almond milk)
- 1 ripe banana
- 1/2 tsp baking powder
Instructions:
- Blend oat packets in a high powered blender.
- Add other ingredients and blend until a well combined batter forms
- Heat non-stick pan, pour batter over and cook until flippable (2-3 mins). Cook on other side another 2-3 mins or until pancake is formed.
- Makes 6 big pancakes
- Enjoy with fresh fruit, date syrup, or homemade jam!
Note: the first pancake might take 4-5 minutes on each side (before pan is warmed)
