Glass noodles have quickly become a staple ingredient in my kitchen, offering endless possibilities for crafting delicious and nutritious meals. These translucent, chewy noodles are like a blank canvas, ready to soak up flavors and elevate your culinary creations. From savory stir-fries to refreshing spring rolls and speedy sautés, glass noodles are here to add a touch of magic to your dishes.

With simple and easily accessible ingredients, you'll embark on a journey of preparing satisfying meals that are budget-friendly. So, let's delve into the world of glass noodles with three fantastic recipes that will breathe new life into your weekly meal rotation!


I order my glass noodles on amazon, these are the best! To prep glass noodles for any dish, follow these simple instructions:

  • Start by soaking the noodles in boiling water for 20-30 minutes or boil them for 5-10 minutes until tender.

Recipe One: Stir-Fried Asian Sweet Potato Glass Noodles

  • Prepare noodles, per above instructions.
  • Prepare a delectable sauce by mixing 1/4 cup water, 1/4 cup coconut aminos, 1 tbsp low-sodium vegetable broth, and 2 tbsp date syrup.
  • Sauté a mix of carrots, peppers, onions, and mushrooms in low-sodium vegetable broth, a splash of liquid aminos, and black pepper until they become irresistibly tender.
  • Introduce your sweet potato noodles to the party, along with 2/3 of that mouthwatering sauce. Add more sauce if needed, depending on how many veggies you use.
  • Finish with a garnish of scallions and toasted sesame seeds. You can also get creative with optional toppings like pine nuts, avocado, or a hint of lime.

Note: Feel free to customize this asian stir-fry by sautéing your favorite veggies in coconut aminos and water, then mixing them with glass noodles for an easy and low-calorie dish.

 

Recipe Two: Spring Rolls

  • Soak noodles as per preference.
  • Wet your rice paper. Best rice paper is large (25cm), I can only get them from the Asian market. The other smaller brands tend to break more easily⁣.
  • Layer ingredients in the center: butter lettuce, slightly baked tofu, cucumber, avocado, cilantro, mint, shredded carrot, sweet potato glass noodles. The options are endless, I also love: micro greens, shredded cabbage, chives, mushrooms, bell peppers, basil, mango, strawberry, sesame seeds, tofu noodles⁣
  • Roll from the back, then the edges and 𝘁𝗶𝗴𝗵𝘁𝗹𝘆 roll forward ⁣
  • Dip into your favorite peanut sauce and voilà!! ⁣

  • Begin by quickly water-sautéing your choice of veggies with garlic and onion powder. Start with 1-2 tablespoons of water and add more as needed until the veggies are perfectly cooked. Mushrooms and broccoli are fantastic choices for this dish.
  • Mix these sautéed veggies with pre-cooked glass noodles, your favorite pasta sauce (find my top pick here!), and a generous helping of vegan cheese (I recommend this one). Cook until the cheese melts to ooey-gooey perfection. You can also microwave it for a minute to ensure the cheese gets extra melty.
