Blueberry Chia Seed Layer:
Ingredients:
- 3/4 cup fresh blueberries
- 1/4 cup chia seeds
- 1/2 cup coconut yogurt
- 1/2 cup unsweetened vanilla almond milk
- 1 tsp vanilla bean powder or vanilla extract
- 1 tsp lemon juice
Instructions:
- Add fresh blueberries to a medium-sized bowl and mash them with a fork until slightly chunky.
- Add chia seeds, coconut yogurt, unsweetened vanilla almond milk, vanilla bean powder or extract, and lemon juice to the bowl.
- Mix all ingredients until well combined.
- Cover the bowl and refrigerate overnight to allow the chia seeds to thicken.
Cherry Coconut Chia Seed Layer:
Ingredients:
- 2 cups frozen sweet cherries
- 2 tbsp chia seeds
- 1/2 cup coconut yogurt
Instructions:
- Place frozen sweet cherries in a bowl and allow them to defrost (or heat in the microwave for 30 seconds).
- Once defrosted, mash the cherries with a fork, leaving some chunks for texture.
- Add chia seeds and coconut yogurt to the bowl with the mashed cherries.
- Stir well until all ingredients are evenly incorporated.
- Cover the bowl and refrigerate overnight to allow the chia seeds to thicken.

Layering
- Start with a jar or a flat bowl.
- Add 1.5 tablespoons of the cherry coconut chia seed layer at the bottom or on one side.
