Are you craving a dessert that's as delicious as it is nutritious? Look no further than our indulgent Chia Pudding featuring two delectable layers topped off with a creamy Avocado Chocolate Mousse. This recipe is not only a feast for the taste buds but also a celebration of wholesome ingredients and irresistible flavors. A note before we dive into the recipes:

  • I recommend using Coyo's natural coconut yogurt. Be sure to check the ingredient list on the container, as sugar is often added, particularly to the flavored varieties!

 

Blueberry Chia Seed Layer:

Ingredients:

  • 3/4 cup fresh blueberries
  • 1/4 cup chia seeds
  • 1/2 cup coconut yogurt
  • 1/2 cup unsweetened vanilla almond milk
  • 1 tsp vanilla bean powder or vanilla extract
  • 1 tsp lemon juice

Instructions:

  • Add fresh blueberries to a medium-sized bowl and mash them with a fork until slightly chunky.
  • Add chia seeds, coconut yogurt, unsweetened vanilla almond milk, vanilla bean powder or extract, and lemon juice to the bowl.
  • Mix all ingredients until well combined.
  • Cover the bowl and refrigerate overnight to allow the chia seeds to thicken.

 

Cherry Coconut Chia Seed Layer:

Ingredients:

  • 2 cups frozen sweet cherries
  • 2 tbsp chia seeds
  • 1/2 cup coconut yogurt

Instructions:

  • Place frozen sweet cherries in a bowl and allow them to defrost (or heat in the microwave for 30 seconds).
  • Once defrosted, mash the cherries with a fork, leaving some chunks for texture.
  • Add chia seeds and coconut yogurt to the bowl with the mashed cherries.
  • Stir well until all ingredients are evenly incorporated.
  • Cover the bowl and refrigerate overnight to allow the chia seeds to thicken.

Layering

  • Start with a jar or a flat bowl.
  • Add 1.5 tablespoons of the cherry coconut chia seed layer at the bottom or on one side.
  • Layer 2 tablespoons of the blueberry chia seed layer on top of or next to the cherry layer.
  • Finish with 1.5 tablespoons of the avocado chocolate mousse on top of or next to the blueberry layer.

  • Either enjoy your dessert right away or put it in the fridge for later!
  • You can also add them to the freezer to store for a longer period of time. When read to enjoy, eat them straight from the freezer for a refreshing treat, or let them thaw for about 5 minutes for a softer texture.
  • Keep any leftovers in the fridge to enjoy for 4-5 days or pop it in the freezer for several weeks!
