Irresistible Chocolate Date Muffins

These chocolate date muffins were created as a delicious solution to some browning bananas and turned out to be a delightful, healthy treat! The combination of a soft muffin base with crunchy mix-ins provides a decadent and satisfying dessert experience.

Ingredients:

  • 2 overripe bananas
  • 1/3 cup cacao powder
  • 2 tbsp ground flaxseeds
  • 3/4 cup unsweetened apple sauce
  • 1/4 cup nut butter
  • 1 cup almond flour
  • 1/4 cup buckwheat flour
  • 1/4 cup date syrup
  • 1/2 cup date sugar
  • 2 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking soda
  • 1 tbsp maca powder
  • 1 cup diced dates
  • 1 cup raw walnuts

Instructions:

 

  1. Preheat your oven to 325°F (165°C).
  2. In a large mixing bowl, mash the overripe bananas with the cacao powder until well combined.
  3. Mix in the ground flaxseeds, unsweetened apple sauce, nut butter, almond flour, buckwheat flour, date syrup, date sugar, vanilla extract, cinnamon, baking soda, and maca powder. Stir until the batter is smooth and well combined.
  4. Gently fold in the diced dates and raw walnuts until evenly distributed throughout the batter.
  5. Scoop 1/4 cup of batter into each muffin tin cavity. This recipe should yield approximately 14 regular-sized muffins.
  6. Bake in the preheated oven for 45 minutes for regular-sized muffins, or 30 minutes for mini muffins. Check for doneness by inserting a fork or toothpick into the center of a muffin; it should come out clean when done.
  7. Allow the muffins to cool slightly before removing them from the tin. Enjoy your delicious and healthy chocolate date muffins!
