Raw "Margherita" Pizza ft. Kale Pesto and Sunflower Cheese

Pizza lovers, rejoice! I'm introducing a healthy, raw pizza that satisfies your taste buds. Try this delightful Raw Pizza Crust topped with Sunflower Cheese and Kale Pesto. It's packed with nutrients, gluten-free, and bursting with flavor. Here’s how you can make it at home!

Raw Pizza Crust

Ingredients:

  • 1 1/4 cup almond flour
  • 1/4 cup ground flax
  • 1/4 cup hemp seeds
  • 1/4 cup sunflower seeds
  • 1 medium red bell pepper
  • 1/2 cup organic strained tomato sauce
  • 1/4 cup frozen sweet corn
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp dried thyme
  • 1 tbsp dried rosemary
  • 1/4 tsp fennel seeds

Instructions:

  1. Process all ingredients except the almond flour in a food processor until well combined.
  2. Mix in the almond flour with a spatula until the mixture resembles a dough.
  3. Split the dough in half and spread evenly on two separate dehydrator sheets, about 1/2 inch thick.
  4. Dehydrate at 130°F for 6 hours.
  5. Once dehydrated, spread sunflower cheese and kale pesto on the crust. Top with basil leaves and sliced cherry tomatoes.

Sunflower Cheese

Ingredients:

  • 1 cup sunflower seeds, soaked overnight*
  • 1/4 cup sesame seeds, soaked overnight*
  • 1 large lemon, juiced
  • 1 clove garlic

Instructions:

  1. Drain the seeds and add all ingredients to a blender.
  2. Blend until smooth.

*Note: if you want a quicker method to soften the seeds, you can soak in boiling water for 30 minutes.

Kale Pesto

Ingredients:

  • 2 cups fresh basil
  • 2 cups fresh curly kale, packed
  • 3 cloves garlic
  • 2 cups pine nuts
  • 1/2 cup water
  • 1 lemon, juiced

Instructions:

  1. Add all ingredients to a food processor and process until everything is broken down, leaving a chunky texture. For a smoother pesto, use a blender.

 

Pizza Assembly:

  1. Spread the sunflower cheese evenly over the raw pizza crust.
  2. Add a generous layer of kale pesto.
  3. Top with fresh basil leaves and sliced cherry tomatoes
