Easy Raw Vegan Blueberry Cheesecake Bites Recipe
Serves: 8-12

Ingredients:

For the Crust:

For the Filling:

  • 4 medjool dates
  • ¾ cup cashew butter
  • ¾ cup unsweetened vanilla almond milk
  • 1 tablespoon lemon juice
  • ½ tablespoon vanilla extract or vanilla bean powder

For the Topping:

  • 2 tablespoons frozen blueberries or jam of your choice

Instructions:

  1. Prepare the Crust:
    • In a blender or food processor, combine the oats and dates. Blend until it starts to clump together, adding 1-3 tablespoons of water as needed depending on the moisture content of your dates.
    • Press the mixture into the bottom of a pan or muffin tins. You can use 8 large muffin tins or 12 mini muffin tins. Consider using silicone molds for easy removal or line the tins with a small strip of parchment paper.
    • Chill the crust in the fridge while you prepare the filling.
  2. Make the Filling:
    • Add all ingredients to a high powered blender.
    • Blend on high until the mixture is smooth and creamy.
  3. Assemble the Bars:
    • Pour the filling on top of the chilled crusts in the pan or muffin tins.
  4. Add the Topping:
    • Defrost the frozen blueberries and spoon or swirl them on top of the filling.
    • As an alternative, you can top with jam of your choice.
  5. Freeze Overnight:
    • Place the pan in the freezer and allow them to freeze overnight.
  6. Enjoy:
    • Once frozen, these bars are ready to enjoy! Keep them stored in the freezer for up to a month. You can eat them straight from the freezer for a refreshing treat, or thaw them for 5 minutes for a softer texture.
