Ingredients:
- 3 very ripe bananas (or 3 frozen bananas, warmed in the microwave)
- 5 pitted Medjool dates
- 1/4 cup almond butter (or any nut/seed butter)
- 1/3 cup non-dairy milk (I use soy!)
- 1 tbsp baking powder
- 1 tbsp lemon juice
- 1 3/4 cup almond flour
- 1/4 cup ground flaxseeds
Instructions:
- Preheat the oven to 350°F.
- In a blender or food processor, blend the bananas, Medjool dates, almond butter, non-dairy milk, baking powder, and lemon juice until smooth and fully combined.
- Add the almond flour and ground flaxseeds. Mix until combined into a dough, but try not to over-mix.
- Spread the batter evenly into a loaf pan (I use this one!)
- Bake for 35-40 minutes at 350°F, or until golden brown and firm when lightly pressed in the center. If needed, cook an additional 5 minutes at 250F or as the oven cools down. The loaf may seem not fully cooked, but will harden as it cools. Allow to cool for at least 15 minutes before slicing and serving. If the bread still isn't completely firm, it will be tomorrow after storing in the fridge.
- Store in an airtight container for up to a week, preferably in the fridge for optimal freshness. Enjoy!
