Homemade Spicy 'Tuna' Sushi

You may have noticed that cauliflower rice has gained popularity as a nutrient-rich alternative to traditional white rice. While white rice is empty calories with minimal nutrients, whereas cauliflower rice is packed with vitamins, minerals, and antioxidants, providing a nutritious boost to meals.Compared to white rice, cauliflower rice boasts a lower glycemic index for better blood sugar control and higher dietary fiber for improved digestive health.

PLUS, concerns have been raised about rice potentially containing traces of arsenic, a toxic substance that can contaminate rice through soil and water sources.

Not only is edamame delicious, but it is packed with protein. In fact, it's one of the richest plant sources of protein available. One cup of cooked edamame contains approximately 17 grams of protein, making it a protein powerhouse for all! So, next time you're craving sushi, don't hesitate to try this plant-based twist. Ingredients: 

  • nori seaweed sheets
  • 4 cups cauliflower rice (equivalent to 1 16oz bag or 1 small head of cauliflower)
  • 1 tbsp unsweetened applesauce
  • 1 cup frozen edamame
  • 2 tbsp white miso
  • 2 large roma tomatoes
  • 1 tbsp coconut aminos
  • 1 tsp sriracha
  • cucumber
  • avocado
  • dip into your favorite sriracha mayo or coconut aminos!

Instructions: 

  1. Prepare the spicy 'tuna': Score an X at the bottom of a tomato and boil for 15 seconds. Immediately transfer it to ice water for 30 seconds, then peel starting from the X using a paring knife. Remove the seeds and cut the tomato flesh into thin strips. Marinate the strips in a mix of coconut aminos and sriracha, adding water to reduce heat if desired.

  2. Cook the cauliflower rice: In a pan, sauté cauliflower rice with 1 tbsp of water and apple sauce over medium heat for 5-10 minutes, stirring occasionally. Add up to 3 tbsp more water as needed. Once soft, transfer the rice to a large bowl.

  3. Prepare the edamame: Boil frozen edamame for about 4 minutes until slightly softened.

  4. Make the edamame-miso mix: In a food processor, combine the boiled edamame and 2 tbsp of mellow miso. Pulse until the edamame is finely chopped and mixed with the miso.

  5. Combine the mixtures: Stir the edamame-miso mix into the cauliflower rice until evenly mixed.

  6. Assemble the sushi: Place a nori seaweed sheet, shiny side down, on a bamboo sushi mat or cling wrap. Spread ½ cup of the edamame-cauliflower rice mixture on the nori, leaving space at the edges. Add thin slices of the spicy 'tuna', cucumber, and avocado on top. Sushi

  7. Roll the sushi: Start rolling the nori sheet away from you, enclosing the fillings. Slice the roll into pieces and serve.
