Strawberry Banana Muffins

Sick of having to shuffle through the grocery store aisle only to ask the clerk where the ingredients you need to make your recipe are? Me too! Use our Strawberry Shortcake Superfood Overnight Oats to make these delicious, gooey, flavorful muffins!

Ingredients:

  • 1/4 cup oat milk (or any plant based milk)
  • 8 medjool dates
  • 2 ripe bananas
  • 2 Strawberry Shortcake Superfood Overnight Oats packets
  • 2 cups almond flour
  • 1tsp baking powder

Instructions:

  1. Preheat oven to 350F
  2. Add bananas, Strawberry Shortcake Superfood Overnight Oats packets, dates, and nut milk to food processor and process until well combined
  3. Add almond flour and baking powder to a bowl, mix.
  4. Fold wet ingredients from the food processor into the flour and stir well.
  5. Using an ice cream scooper, fill 10-11 muffin tins and bake for 15-18 minutes.

Store muffins for up to 4 days in an airtight container or make them ahead of time and freeze!

To freeze: Let them cool completely and add them to a container to maintain their shape OR freeze on a sheet pan until solid (3-4 hrs) and then transfer frozen muffins to a freezer-safe bag. Freeze for up to 6 months. Defrost frozen muffins at room temperature for a few hours.
