Ingredients:

Crust:

  • 4 1/2 cups pecans
  • 3 tbsp chopped medjool dates
  • 2 tbsp cinnamon
  • 1 tbsp vanilla bean powder or vanilla extract

Filling:

  • 8 cups sliced apples
  • 5 cups sliced strawberries
  • 1/4 cup lemon juice
  • 1 tbsp vanilla bean powder or vanilla extract

Instructions:

  1. In a food processor, combine 3 cups of pecans, cinnamon, and vanilla bean powder or extract. Process for 1 minute until finely ground.

  2. With the processor running, gradually add small amounts of chopped medjool dates until the mixture starts to come together and form a dough-like consistency.

  3. Transfer the mixture to a bowl and stir in the remaining 1 1/2 cups of pecans. This will add texture to the crust.

  4. Press the crust mixture firmly into the bottom of your pan or dish, reserving about 1 1/2 cups of the mixture for the topping.

  5. In a separate bowl, combine the sliced apples, sliced strawberries, lemon juice, and vanilla bean powder or extract. Toss until the fruit is evenly coated.

  6. Evenly distribute the fruit filling over the crust in the pan or dish.

  7. Sprinkle the reserved crust mixture evenly over the top of the fruit filling, creating a crumble topping.

  8. Serve it as is or top it with a scoop of vanilla nice cream for an extra indulgent treat!

So, if this cobbler is not baked, why does Step 8 say: “Once baked, allow the cobbler to cool slightly before serving.”
