These Thai Tofu Skewers are creamy, cozy, and somehow the perfect mix of sweet and savory. They’re one of those dishes that somehow taste restaurant-level but are actually super easy to make at home.
Perfect to put over a bed of greens, serve with quinoa, or eat right off the stick!

Thai Peanut Sauce (Blend Together)
(for 2 blocks of extra-firm tofu)

1 onion

¼ cup + 2 tbsp creamy peanut butter

¼ cup + 2 tbsp tomato paste
-
Juice of 1 lemon
-
¼ cup + 2 tbsp water
-
1 tsp nutmeg
-
2 tsp cinnamon
-
1 tsp ground ginger
-
½–1 tsp chili flakes (depending on your spice level)

Splash of coconut cream (about 1 tbsp)
Tofu Prep

Chop tofu into large chunk.

Coat tofu in ¾ of the sauce and marinate in the fridge for 1 hour.

Save the rest of the sauce to drizzle on top later.
To Cook
Keep your tofu golden and juicy — not too brown!
Grill:

Soak skewer sticks in water to prevent sticking.

Grill tofu skewers for ~7 minutes per side.
Bake:

Bake at 425°F for 20 minutes, flipping halfway through.
Serve with a scoop of grains, some steamed veggies, or just drizzle extra sauce and dive right in. Either way you win.
