Thai Tofu Skewers

Thai Tofu Skewers

These Thai Tofu Skewers are creamy, cozy, and somehow the perfect mix of sweet and savory. They’re one of those dishes that somehow taste restaurant-level but are actually super easy to make at home.

Perfect to put over a bed of greens, serve with quinoa, or eat right off the stick!

Thai Peanut Sauce (Blend Together)

(for 2 blocks of extra-firm tofu)

  • 1 onion

  • ¼ cup + 2 tbsp creamy peanut butter

  • ¼ cup + 2 tbsp tomato paste

  • Juice of 1 lemon

  • ¼ cup + 2 tbsp water

  • 1 tsp nutmeg

  • 2 tsp cinnamon

  • 1 tsp ground ginger

  • ½–1 tsp chili flakes (depending on your spice level)

  • Splash of coconut cream (about 1 tbsp)

Tofu Prep

  1. Chop tofu into large chunk.

  2. Coat tofu in ¾ of the sauce and marinate in the fridge for 1 hour.

  3. Save the rest of the sauce to drizzle on top later.

To Cook

Keep your tofu golden and juicy — not too brown!

Grill:

  • Soak skewer sticks in water to prevent sticking.

  • Grill tofu skewers for ~7 minutes per side.

Bake:

  • Bake at 425°F for 20 minutes, flipping halfway through.

Serve with a scoop of grains, some steamed veggies, or just drizzle extra sauce and dive right in. Either way you win.

XOXO,
