How to Make Vanilla Nice Cream Sandwiches with Doc’s Daughters Cookie Mix

Who doesn’t love a good ice cream sandwich? 🍪✨ These Vanilla Nice Cream Sandwiches are the ultimate guilt-free treat, perfect for satisfying your sweet tooth while staying true to your health goals. Using the Doc’s Daughters Chocolate Chip Oatmeal Raisin Cookie Mix, this recipe brings together the chewy goodness of cookies and the creamy delight of nice cream—all made with wholesome, plant-based ingredients!

Ingredients for the Nice Cream:

  • 1 can (13.5 oz) coconut cream
  • 3/4 cup gluten-free rolled oats
  • 8-10 medjool dates (pitted)
  • 1 tbsp vanilla bean powder

Instructions for the Nice Cream:

  1. Add all the ingredients to a high-powered blender and blend until smooth and creamy.
  2. If you're using the nice cream sandwich mold, you can add nice cream directly to the mold (see assembly below)
  3.  If not, pour the nice cream mixture into a freezer-safe container, cover, and freeze until firm (around 4-6 hours). Pro tip: Stir halfway through for a creamier consistency.

Assembly:

Mix the Chocolate Chip Oatmeal Raisin Cookie Mix batter according to the package instructions! Now there are two ways to form your ice-cream sandwiches:

Using an Ice-Cream Sandwich Mold:

  1. I love to use a silicone ice cream sandwich mold like this one. Instead of forming traditional cookies, just add the batter directly into the molds and bake in the mold.
  2. While the cookies bake, blend your ice cream
  3. Once the cookies are done, pour the ice cream into the mold as per the package instructions. It’s okay if it seems a bit liquid at this step.
  4. Place the top cookie layer directly onto the melted ice cream. I skip using the mold’s lid in the freezer (but feel free to use it if you prefer!)—I’ve found this method works best.
  5. Freeze overnight and enjoy!

Without an Ice-Cream Sandwich Mold:

  1. Bake the cookies on a baking sheet lined with a Silpat (my favorite!) or parchment paper, shaping evenly sized cookie layers. Let them cool completely after baking.
  2. Prepare the ice cream and freeze it for a few hours until firm.
  3. Sandwich a generous scoop of frozen ice cream between two cookie layers, gently pressing them together. For extra firmness, wrap each sandwich individually and freeze for an additional hour before serving.
