Vegan Chocolate Chip Cookie Dough Bites

Jenna Here. Back in the kitchen. I’m so excited to share with you the pride and joy of my kitchen, Chocolate Chip Cookie Dough Bites. Whatever you call this sweet treat- truffles, bites, power balls, or pop ‘ems, just know they are damn good. Once you taste these, you'll be shocked why you ever ate dessert with processed sugars, dairy, or unhealthy ingredients. These are full of heart healthy fats from nuts and seeds. These are ingredients you actually should be including in your diet like chia seeds because they have shown to be lifespan promoting. PLUS, no processed additives or even unhealthy ingredients.

We’re the Doctors’ Daughters which means we sweeten our desserts and foods with whole dates. Using the whole date means your body is processing the entire date, full of micronutrients and fiber with the sweetness from the fruit. When you break down the whole food, it is slowly absorbed into the blood stream opposed to processed sugars or "fast foods" that get rapidly absorbed into the blood stream.

I'm about the simple recipes that just happen to taste amazing. My friends, this is one of them.

Dates are high in several nutrients, fiber and antioxidants, all of which may provide health benefits ranging from improved digestion to a reduced risk of disease.

 

Cashews are low in sugar and rich in fiber, heart-healthy fats, and plant protein. They're also a good source of copper, magnesium, and manganese — nutrients important for energy production, brain health, immunity, and bone health.

 

Chia Seeds - nuts and seeds are a must in the Nutritarian Lifestyle. Research has shown they improve digestive health, blood levels of heart-healthy omega-3s, and risk factors for heart disease and diabetes.

 

Vanilla Bean Powder is the pure, black powder. It has antioxidants that help prevent cell and tissue breakdown, stimulate the body’s natural regrowth and eliminate free radicals. Vanilla doesn’t just have that amazing flavor and aroma, it’s actually good for you

Vegan Chocolate Chip Cookie Dough Bites

Serves: 10

INGREDIENTS

1 cup medjool dates, pitted

1/2 cup raw cashew butter

3 tablespoons ground chia seeds

2 tablespoons almond flour

1/2 teaspoon vanilla bean powder, optional

2 tablespoons 100% cocoa chocolate chips

cocoa powder, for topping, optional

 

INSTRUCTIONS:

Blend dates, cashew butter, ground chia seeds, almond flour and vanilla bean powder in a food processor. Add chocolate chips after the batter has been mixed and pulse briefly to combine.

Roll mixture into balls and roll in cocoa powder if desired. Refrigerate or freeze.
