Nice collection of Nutritarian appetizers…

I’ve been a Nutritarian for close to 15 years and I eat pretty simply most days (soups, salads, steamed veggies) so it’s always a conundrum when I need to make things for a pot luck. I like to bring things that are health-promoting rather than disease-contributing. By now, most people I know have or are well on their way to heart disease, diabetes, etc. These recipes have a nice variety and the ones I have tried so far are tasty enough that even those not trying to be so conscientious about their food can enjoy them. I made the Stuffed Peppers and Stuffed Mushrooms for two different parties and everyone tried & liked them - no leftovers! Even those that usually avoid all vegetables (like my brother & friend’s dad) had not one, but a couple (!) and I consider that a huge win in my book. The Stuffed Mushrooms has an “Everything But the Bagel Cream Cheese” component that was delicious & versatile as a spread on crackers. Loved the coconut bacon recipe too. I tried the Sweet Potato Rolls and they were just okay for me but I did make a change in the recipe - I used potato starch that I had on hand instead of tapioca starch or arrowroot that the recipe called for so the texture felt off. They looked beautiful (see photo) though so I may try again with the proper ingredients. Looking forward to trying the more recipes for other get togethers. I’m very happy with this curated collection of appetizers.
